Nutritious Fall Foods

Hi, I’m Rene Ficek, registered dietitian nutritionist. Fall is my favorite time of year and one of the reasons why is because I love Fall foods so much, and I'm not just talking about pumpkin pie, but a lot of the most healthy and nutritious foods are Fall foods.

Beets

The first food we have are beets. All root vegetables such as carrots and rutabaga are all superfoods, but beets stand out from the rest. Nutritionally, they are jammed packed with folate, vitamin C and magnesium. Their flavor is one of a kind and roasted beets are the perfect side dish to any Fall meal.

Pomegranates

Next we have pomegranates. They're rich in antioxidants and they're a great source of fiber and potassium, as well as vitamin C. Simply slice open the pomegranate and enjoy the many seeds inside. And if this is too time consuming for you, pomegranate juice is a great way to consume the many great vitamins and minerals that the fruit offers.

Pumpkin Seeds

And lastly we have pumpkin seeds. While many pumpkin carvers throw the pumpkin insides in the trash, others know the pumpkin seeds are a delicious fall superfood. They are rich in healthy fats and oils, and in order to enjoy these, simply throw them on a baking dish and roast them in the oven until they're nice, dry, and crispy. They can be enjoyed alone as a snack or thrown into a trail mix or even thrown on a salad for a nice added crunch.
