I’m heading back to Jamestown College (now called The University of Jamestown) in Jamestown, ND later this week, where my healthy eating mission all began some 60+ years ago. That’s where I learned about how nutrition plays an integral part of one’s overall health. And, where I crafted menus for my own obese father to follow. Oh, how I worried about his health.
My daughters Paula, Ruth and Sarah are joining me this time around. I’m showing them the campus, and have arranged to have them meet the current president of the college, Dr. Badal.
I can’t tell you how proud I am of that school! Having attended it, and back in those days when I went there, very few nursing programs offered bachelors of science degrees and registered nursing concurrently. I was very fortunate to earn my degree and registered nursing designation at the same time.

She made healthy eating her mission in life long before anyone else did, in hopes of helping her own obese father. A registered nurse by training and entrepreneur at heart, she lives, eats and breathes everything about healthy eating and helping to improve people’s eating habits and overall health. She enjoys never having to bother with grocery shopping, cooking and counting calories. Her favorite SSHE meal, although it’s hard to pick just one, is the Potato Gnocchi with Basil Pesto Sauce.
